
Recently I was throwing an Italian themed dinner party for 30+ people, and wanted to make everything from scratch. This meant that I needed to have a lot of tomato sauce on hand. I contemplated buying my favorite sauce – Trader Giotto’s Arrabiata Sauce (Trader Joe’s) – which is delicious and convenient, (if you haven’t tried this sauce, I highly recommend you do, it is slightly spicy and delicious) but then I calculated how much sauce I was going to need and quickly realized the convenience of it would be far outweighed by the price tag. So I decided to make my own sauce. I have made sauce many times before, but I was never really thrilled with the end results. I turned to Google to read some recipes and maybe combine ideas into one recipe.
That’s when I came across Giada De Laurentiis’ recipe for a simple tomato sauce. The recipe looked very basic, but there was something that caught my eye. She mentioned adding unsalted butter if the sauce is too acidic. I was intrigued! That was my main complaint every time I made sauce, it was too acidic.
So I decided to try her recipe and also the butter trick. Low and behold…it worked! I was quite pleased with the results. The sauce tasted great and the butter definitely helped balance out the acidity. I highly recommend this trick! Jut like adding salt to a bad cup of coffee…now you have another random kitchen trick to add to your arsenal….butter in acidic tomato sauce. You could even use this trick with jars of tomato sauce you buy that are on the acidic side of life.
